About us:

Cypress is a collaboration between three local restaurateurs and the Atticus Hotel family. Jointly owned and operated, Cypress brings McMinnville’s culinary scene a community focused approach steeped in the rich flavors of the Mediterranean.

Chef Henry Kibit and Chef Travis Bird have teamed up with hospitality maven Michelle Grannis to bring the Cypress vision to life in McMinnville. Chef Henry grew up in Michigan and discovered his passion for food while immersed in an area rich with diverse cultures and cuisines, before moving to Oregon for culinary school. With years of experience working in some of Portland’s most loved restaurants, Henry found his way to wine country in 2015 when he became Executive Chef at Sokol Blosser Winery.

Chef Travis spent almost a decade on the culinary team at JORY at The Allison Inn & Spa before joining forces with Chef Henry on his culinary team, developing an elevated food pairing experience at the winery. After Chef Henry’s departure, Chef Travis stepped into his role as Executive Chef, running the culinary program for Sokol Blosser. The two have continued a friendship centered on their love of food and a shared desire to help people connect more deeply through inspired culinary experiences.

Michelle Grannis cut her teeth in the restaurant world working in numerous roles before becoming a beloved face at Community Plate in downtown McMinnville. Michelle joined the Atticus Hotel in 2020, moving on to become the Group Sales Coordinator before finding her way back to her original passion for creating unforgettably welcoming dining experiences.
